Spicy Sri Lankan Lamb Curry
Serves 2-3
Ingredients
Lamb Cubed 250g
Onion Roughly Chopped 1/3cup
Ginger Crushed/Finely Chopped 1tsp
Garlic Chopped 2 cloves
Green Chilli Roughly Chopped 2
Curry Leaves 5
Coconut Cream/Milk 1/3cup
Oil 1tbsp
Cloves 5
Cardamom 3
Coriander Seeds 1tsp
Cinnamon 2 small sticks
Roasted Sri Lankan Curry Powder 2tsp
Roasted Chilli Powder 2tsp
Cummin Powder 1tsp
Water 1/2cup
Salt to Taste
Method
1. Into a pan add oil, Garlic, Ginger, Green Chilli, Curry Leaves and Onion and fry until its aromatic and onion looks translucent in colour.
2. Add all the other ingredients except for the Water and Coconut Milk into the pan and mix well until the meat is coated with all the spices. Once everything is coated add water and stir well.
3. Cover and cook on Low-Medium heat for about 15-20 mins or until the meat is cooked all the way through and the gravy is thickened.
4. Add Coconut Milk and stir well.
5. Leave uncovered until boiling for couple of minutes.
6. Turn off the heat and enjoy your Spicy Curry.
7. Serve with Rice, Bread, Roti, String Hoppers or Hoppers.
